Another way to use up leftovers from Thanksgiving! Another great way to do a Monte is with leftover chicken from the grill, honey dijon mustard, and cheddar cheese. Either way, a great treat!

A Monte Cristo sandwich is the perfect balance of salty and sweet. Using leftover turkey and cranberry sauce is a tasty way to dress up a classic sandwich. Slices of sweet pear complement the savory cheese. Fry and dust with a little powdered sugar for a gold star meal.

Ingredients For thanksgiving monte cristos for two

  • 1/3 lb
    leftover turkey, chicken or fresh turkey or chicken
  • 1 Tbsp
    olive oil
  • coarse salt and fresh ground black pepper, if turkey is already seasoned you may not need this
  • 1 lg
    egg
  • 1 Tbsp
    milk
  • 1/8 tsp
    nutmeg
  • 1/8 tsp
    cinnamon
  • 2 Tbsp
    jellied cranberry sauce or honey dijon mustard
  • 4 slice
    whole grain bread or wheat bread
  • 1/2 c
    fresh baby spinach leaves
  • 1/2
    ripe pear sliced thin or apple
  • 4 slice
    Swiss cheese, provolone or cheddar
  • 2 Tbsp
    powdered sugar for dusting

How To Make thanksgiving monte cristos for two

  • Slices of turkey on a plate.
    1
    If using leftover meat, measure and go to step 2. If using fresh turkey or chicken, slice turkey or chicken in half horizontally, creating thin cutlets. Heat 1/2 Tbsp oil in a skillet over med-high heat. Season chicken with salt and pepper and saute for 5 min or until no longer pink in the center. Remove and reserve on a plate.
  • Egg, milk, nutmeg, and cinnamon in a bowl.

    In a shallow dish, whisk egg, milk, nutmeg, and cinnamon together until blended.
  • Cranberry sauce and mustard spread on bread.

    Spread cranberry sauce or mustard on one side of each slice of bread and place sauce side up on the work surface.
  • Sandwich layered with cheese, spinach, pear, and turkey.

    Layer 2 slices with a piece of cheese, spinach, pear or apple, turkey or chicken, and another piece of cheese.
  • Sandwich assembled.

    Top with the remaining slice of bread, sauce side down. Gently press together. You should now have 2 sandwiches.
  • Dipping sandwich in egg wash.

    Heat remaining oil in the skillet over med-high heat. Use a wide spatula to carefully dip each sandwich into the egg mix, coating both sides. You can help it along with a brush if you would like to or if you feel that you need more egg mixture, double up on the milk, eggs, nutmeg, and cinnamon as well.
  • Frying the sandwich to golden brown.

    Place in a hot skillet. Saute turning once in about 5 minutes or until golden brown. Remove from heat and cut sandwich on an angle.
  • Dusting sandwich with powdered sugar.

    Arrange the sandwiches on a plate and dust with 1 Tbsp of powdered sugar each. If you wish, you can have extra sauce on the side for dipping or spreading onto the sandwich.
