This chicken is so moist and juicy and full of flavor. It has sweet with heat and great Thai flavor. Great served with rice or noodles with lots of extra sauce.

Ingredients For thai roasted chicken with thai inspired bbq sauce

  • FOR THE CHICKEN
  • 1
    whole chicken
  • MARINADE
  • 1 c
    thai soy sauce or regular soy sauce
  • 1/2 c
    shaoxing wine
  • 3 Tbsp
    thai chili paste in soybean oil or garlic chili sauce
  • 1 tsp
    toasted sesame oil
  • 1 tsp
    white pepper
  • 6 clove
    garlic minced
  • 1 Tbsp
    fresh ginger grated
  • 3 Tbsp
    honey
  • FOR ROASTING
  • 2 c
    chicken stock
  • 1 lg
    onion quartered
  • THAI INSPIRED BBQ SAUCE
  • strained pan drippings
  • 2/3 c
    brown sugar
  • 1/2 c
    ketchup
  • cornstarch and water to thicken

How To Make thai roasted chicken with thai inspired bbq sauce

    Rinse the chicken in water and pat dry. Place chicken breast side down on carving board and with a knife or kitchen scissors remove the back bone by cutting down each side of the neck bone. This is called Spatchcock. (you don't have to do this but it cooks faster and absorbs the marinade better). Turn the chicken over and lay it out flat and place in a container big enough to hold the chicken

    Mix the marinade ingredients together and rub all over the chicken and let marinade at least 6 hours or overnight. Turning the chicken a few times in the marinade.

    Preheat oven 375 degrees. Add the chicken to a roasting pan with the marinade. Add the chicken stock and onion. Bake for 1 to 1 1/2 hours until chicken in no longer pink or internal temp is 165 degrees. Remove from oven and place chicken on carving board to rest.

    Strain the pan drippings and and discard the solids. Place the drippings in a pan and bring to a boil on the stove and let reduce for 15 minutes. Add the brown sugar and ketchup and whisk until well incorporated. Mix cornstarch and water together to make a slurry and add to liquid to thicken. How much you need will depend on how thick you want the sauce.

    Serve the sauce over the chicken.
