Week 2 Challenge in Sandwiches, Sammiches & Sammies. This is my samie. The ingredients were red leaf lettuce, hot sauce and roasted red peppers(optional). We have so many delicious sammies too choose from for the Sandwich of the Week. Stop by and see how creative the group members are. Boy it's alot of fun. Two new ingredients are posted every Friday. Ingredients For chicken greens and hoe cakes

  • HOE CAKES
  • 1 1/2 c
    self rising corn meal mix
  • 2 c
    2 cups whole buttermilk
  • 1 lg
    egg
  • 2
    scallions, stalks, chopped
  • 2 Tbsp
    roasted red pepper, chopped
  • 1 Tbsp
    everglades seasoning
  • 3 Tbsp
    bacon fat
  • SPICY PEPPER SAUCE SAUCE
  • 1/2 c
    mayonnaise
  • 1 Tbsp
    srirachi hot sauce
  • 2 Tbsp
    roasted red or orange peppers, thinly sliced then chopped
  • SAUTED LEAF LETTUCE
  • 1 head
    red leaf lettuce, cut
  • 1 Tbsp
    extra virgin olive oil
  • 1 Tbsp
    fresh lemon juice
  • 1 pinch
    salt
  • 2 oz
    italian blend shredded cheese
  • 1 Tbsp
    chives, dried
  • 2 lg
    boneless skinless fried chicken breasts, sliced

How To Make chicken greens and hoe cakes

    In a Large mixing bowl combine egg and milk. Whisk. Combine remaining dry ingredients for hoe cakes and mix well. Fold in the bacon fat scallions and roasted red peppers. Mix until you have a pancake consistency

    Mix pepper sauce ingredients in a small mixing bowl. Mix well

    In a heated add the extra virgin oilvie oil, Saute lettuce with the next 3 ingredients until leaves are wilted. Set aside

    On a large oven proof pan place a hand full of cheese to make bundles. Add chives. Bake until the ends of cheese get toasty and brown. Remove and set aside to cool.

    Fry chicken unti golden brown...this should about 12 minutes or until you the interal temperture reads 160 degrees. Slice on a bias

    On a plate, add hoe cake, sauce, chicken slices, spinanch and red peppers. Garnish with baked cheese rounds, Enjoy
