This is one of my favorite dishes to make. Yields a lot and only gets better with time. Feel free to experiment with different add ins!

Ingredients

  • 2 Tbsp
    extra virgin olive oil
  • 4
    chicken breasts, roughly chopped
  • 4
    cloves of garlic
  • 1
    bay leaf
  • 1
    onion, sliced
  • 1 c
    white wine, dry
  • 1 sm jar(s)
    pimentos
  • 1
    handful of golden raisins
  • 1 c
    chicken stock
  • 2 Tbsp
    butter

How to Make Spanish Chicken

Step-by-Step

  1. Combine in a nonstick pan the olive oil, garlic, onion and chicken. Cook until onions are soft and chicken is cooked through.
  2. Chop olives add to pan with pimentos and raisins. Cook just a few minutes before moving to next step.
  3. Add white wine and bay leaf. Allow to simmer until liquid reduces to about half. Stir in butter and plate over rice once butter is incorporated!
