Quick Chicken Fiesta Casserole

Ingredients

1 10 oz can(s)white chcken breast or 2 small cans

1 10 oz can(s)rotel tomatoes and chilies
-
2 can(s)cream of chicken soup
-
1 15 oz can(s)mexican style chili beans
-
1 pkggrated sharp cheddar cheese
-
1-2 cshredded or torn iceberg lettuce
-
1 cchopped tomatoe
-
1 pkgfritoes (not the dip kind)
How to Make Quick Chicken Fiesta Casserole
- In a saucepan heat cans of chicken breasts,Rotel tomatoes and chilies, cream of chicken soup, and let come to a slow boil. Turn off heat.
- In a casserole dish spray the bottom and sides. Pour in Frito's (you may want to use most of the bag except a handful or so). Pour the chicken mixture over the top covering the Frito's. Cover with grated cheese. Bake at 350 degrees for 30 mins or until it becomes bubbly and not soupy any longer.When taken out of the oven let stand a few minutes before serving. Heat Chili Beans. Mix lettuce and tomato together.
- Serve the casserole topped with Chili Beans, lettuce and tomato and add some taco sauce on top. This is a great one meal dish and is very easy to do.
