Ingredients For pollo pibil

  • 1 c
    fresh orange juice
  • 1/3 c
    fresh lime juice
  • 1/4 c
    fresh grapefruit juice
  • rawspicebar’s achiote paste
  • 1
    (3–4-lb.) whole chicken, cut into 8 pieces
  • warm tortillas and red onions, for serving
  • kosher salt, to taste

How To Make pollo pibil

    Combine juices, achiote paste using RawSpiceBar’s Achiote Paste, and salt in a blender, and purée until smooth, at least 2 minutes. Set aside.

    Add chicken pieces to Dutch Oven and pour over sauce. Place pot over medium-high heat, and bring sauce inside to a boil; reduce heat to medium-low, and cook, covered, until chicken is cooked through, about 45 minutes.

    To serve, uncover pot and divide chicken among serving bowls and serve with sauce, plus onions and tortillas, if desired. Enjoy!
