I enjoy this Pecan-Crusted Chicken because I love nuts for both the texture and the flavor that they give to a dish. Using pecans in the coating instead of cornmeal or breadcrumbs adds more crunch as well as a hint of southern style. Although for this Pecan-Crusted Chicken we usually use chicken breast you could also use this with legs and/or thighs plus it works with pork.

1/3 cpecans, coarsely chopped

1/3 cdried bread crumbs

1/2 tspdried thyme

1/2 tsppaprika

1/2 tspsalt

4boneless chicken breast halves

3 Tbspdijon mustard
How To Make pecan chicken

1In a shallow bowl, combine the pecans, bread crumbs, thyme, paprika and salt. Coat chicken with mustard, then with pecan mixture. Place in a greased 13x9 inch baking pan.

2Bake, uncovered, at 375 degrees for 30-35 minutes or until chicken juices run clear.
