I've made this recipe 2 X now. Once when we first were married,then years later when I stumbled apon it again. I pulled out my CHICKEN recipe book tonight, and noticed a bookmark. Opened it up and discovered this recipe once AGAIN! A dish I thought tasted of India. The curry,peanut butter,and grapes make up this fresh tasting salad.

Ingredients For peanut chicken in pineapple boats

  • 2
    chicken breasts, boneless and skinless,cut into bite sized pieces
  • 2
    celery stalks,diced
  • 8 oz
    fresh green seedless grapes
  • 1/3 c
    smooth peanut butter
  • 1 can
    20 oz. pineapple tidbits,drained
  • FOR THE DRESSING
  • 1/3 c
    peanut butter, creamy
  • 1/4 c
    mayonnaise
  • 2 Tbsp
    milk
  • 1 clove
    garlic,finely diced
  • 1 tsp
    curry powder
  • 1 Tbsp
    apricot preserves
  • salt and pepper

How To Make peanut chicken in pineapple boats

    Cook chicken in a nonstick skilet on med-high heat until no longer pink. Set aside. Combined Pineapple,chicken,celery and grapes in a bowl.

    Put all dressing ingredients into another bowl and mix with a wooden spoon or wisk until evenly blended. Season with salt & Pepper. (The dressing will be thick until thinned by the juices from the pineapple.)

    Add the dressing to the chicken mix.Fold together gently,but thoroughly. Sprinkle salted,coarsly chopped peanuts over the top before serving! You may hollow out a pineapple 1/2 or just serve it out of the bowl.
