I have had this quick and easy recipe for quite some time -so delicious- this will soon become your family stand by. Recipe works well with any seafood or other meats. Even Spam and Bologna .

  • 1 lb
    boneless pork, cut in bite size pieces
  • 1 Tbsp
    taco seasoning, more or less
  • 2 Tbsp
    vegetable oil
  • 8 oz
    bottle chunky-style salsa
  • 1 sm
    red bell pepper, cut in thin strips
  • 1/3 c
    peach preserves
  • 1/4 c
    pineapple juice , apple cider , orange juice or water
  • 4 c
    cooked rice(i like jasmine)
  • 1 Tbsp
    chopped chives
  • 1/8 tsp
    sesame seeds

    Place pork pieces in a bowl; sprinkle taco mix over and toss well to coat all- use a little more if you like. Spray large skillet with non-stick spray- then heat oil in the skillet; over medium-high heat add pork pieces and cook to brown, stirring occasionally. Add salsa, pepper slices, juice and preserves to pan, lower heat. Cover and simmer for 10-15 minutes. Serve over prepared rice. sprinle with chives and sesame.
