  • 3
    uncooked boneless, skinless chicken breasts, cut into 1-inch pieces
  • 2 c
    instant rice, like minute rice, uncooked
  • 2 c
  • 1 1/2 c
    frozen mixed vegetables
  • 2 can(s)
    cream of chicken soup, undiluted
  • 1 can(s)
    cream of mushroom soup, undiluted
  • 1 Tbsp
    or 1 cube chicken bouillon, crumbled well
  • 1/2 tsp
    black pepper
  • 1/2 c
    cold butter, sliced into thin slices

How to Make One-Dish Chicken & Rice Casserole


  1. Preheat oven to 350 and spray a 9x13-inch casserole dish with nonstick cooking spray.
  2. Mix all ingredients, except butter, in a large bowl and mix.
  3. Pour into prepared casserole dish and top with butter slices. Bake 1 hour, uncovered.
