Mr Food's Easy & Light Chicken Cordon Bleu

This was on a noon time news segment about 20 yrs ago in NY. Its easy and delicious as well as being much lighter than the frying recipe.
The beauty of the muffin tins is that it keeps the cheese from oozing out.

pam cooking spray
boneless, skinless chicken breasts
6 slice
deli ham
6 slice
swiss cheese
salt, pepper, paprika to taste

cream of mushroom soup or cream of chicken soup

1preheat oven to 325
2spray 6 muffin tin with pam, set aside
3pound chicken between 2 pieces of plastic wrap until flat, or use a fillet knife and fillet them thin.
4lay a piece of chicken on a lightly floured surface, lay a piece of ham then a piece of cheese and roll it up.
5tucking each open end under, push the roll into the muffin tin. what it should look like is a muffin made of raw chicken. The ham and cheese should be unseen.
6you can cover the muffin tin with aluminum foil if you like your chicken meat to be extra juicy. I have put the foil on half way through, to avoid the top from drying out.
7Sprinkle with salt, pepper and paprika and bake for 20 to 30 minutes.
8mix soup and milk in saucepan, heat on low stirring occasionally until smooth and warm.
9serve chicken on bed of rice with gravy. yum!
