I had this once at Epcot Center in Orlando, FL. So, remembering the flavors, I came up with my own version of it (minus the cinnamon).

Big on flavor, Monika's easy Moroccan chicken is made with simple and affordable ingredients. The chicken is juicy and tender. It soaks up the taste of the aromatic sauce while it simmers. Kalamata olives add a salty flavor, and fresh lemon juice adds a tart flavor we loved. Each flavor is distinct without being overwhelming. Garnishing with cilantro and parsley adds a pop of freshness. Serve with yellow rice and green salad for a meal everyone will love.

Ingredients For monika's moroccan chicken

  • 3 lb
    chicken, thighs are best but you can use breast
  • 1 sm
    onion, diced
  • 3 clove
    garlic, minced
  • 2 md
    lemons, zested and juiced
  • 2 tsp
    paprika
  • 1 tsp
    cumin
  • 1 tsp
    ginger
  • 1 tsp
    turmeric
  • 1/4 tsp
    ground black pepper
  • 2 Tbsp
    olive oil
  • 1 c
    Kalamata (Greek) olives
  • 1/2 c
    water
  • 1/4 c
    cilantro
  • 1/4 c
    parsley

How To Make monika's moroccan chicken

  • Chicken coated in a mixture of paprika, cumin, ginger, turmeric, and pepper.

    In a bowl, mix the paprika, cumin, ginger, turmeric, and pepper. Gently pat the chicken pieces dry. Marinade chicken in this dry rub for about 1 hour.
  • Browning both sides of the chicken.

    In a large skillet, add the olive oil and the chicken. Brown the chicken for about 3 minutes on each side.
  • Onions, garlic, lemon zest and juice, water, and Kalamata olives added.

    Then, add the onions, garlic, zest of 2 lemons, and juice. Next, add the water and olives.
  • Moroccan chicken simmering.

    Let it simmer for about 30 minutes until cooked thoroughly. Garnish with cilantro and parsley just before serving.
