This recipe started out as my mother-in-laws, the first time I came to dinner before getting married,she made this for the family, she got this recipe from being in Africa doing ministry work as a child.Her family made it for her and she for her family, and now I have tweaked it for my family. My version is sweeter than hers and my young children love it.Its not to strong nor harsh on their tummies.{Since they didn't grow up on the tradition} Now my kids beg for Curry Chicken a couple times a year and this is how I make mine, I hope my dish finds its way to your dinner table. Ingredients For lizzy's famous curry chicken

  • 4-5 lb
    boiled chicken
  • 6 c
    chicken broth
  • 2 can
    coconut milk 13.66 fl oz (403 ml)
  • 1 md
    diced onion
  • 2 Tbsp
    chopped garlic
  • 2 Tbsp
    chopped and peeled ginger
  • 1/4 c
    cornstarch
  • 4 Tbsp
    tomato paste
  • 2 Tbsp
    cumin powder
  • 2-4 Tbsp
    curry powder { start with 2 t and work your way up to you taste}
  • 1 Tbsp
    turmeric powder
  • 1/2 c
    brown sugar
  • 6 c
    jasmine rice
  • raisins {optional}
  • diced bananas {optional}
  • shredded coconut {optional}
  • {optional} peanuts
  • shredded cheddar cheese {optional}
  • 1 can
    crushed pineapple {optional}
  • cilantro, fresh {optional}
  • fresh tomatoes diced {optional}
  • fresh lime juice

How To Make lizzy's famous curry chicken

    Place chicken in a large pot with water to cover. Cover pot and bring to a boil; reduce heat to a gentle boil and cook for about 90 minutes, or until chicken meat is falling off of the bone. Remove chicken, let cool and shred or chop the meat. Reserve the broth.

    In a large pot add 5 C. of broth to a high heat.Take the last of the broth and mix in a separate bowl with the cornstarch,whisk into the 5 cups of boiling broth, whisking until smooth, continue to boil til thickened. Once thickened reduce heat to medium.Add tomato paste,brown sugar,garlic,coconut milk,onion and chicken. simmer on low-medium.

    While the sauce is thickening cook your rice. I cook mine in a rice cooker, but you may cook yours the way you prefer.

    Once you've started your rice, add all of your spices.... {the longer you cook your spices,the stronger they get} so if you like it spicey and hot, add the whole 4 T of curry and simmer longer, if not,simmer less and add less. SIMPLE .

    While everything is finishing up cooking, start chopping up your cilantro,bananas,tomatoes,cheese,open your can of pineapple and bag of coconut and peanuts. Place everything in separate bowls .

    Plate your rice,then add your chicken and curry sauce, add the ingredients on top of your sauce. { I know it sounds gross to add all of these things, BUT do it!!!!! } Mix everything together on your plate and squeeze lime juice over everything. The mixture of the sweet and heat makes it AMAZING!!!!! You wont be disappointed ! I promise!!! Enjoy!!!
