This is a staple for my low carb tendencies! However, I love this dumped all over my Cilantro Lime Rice. So flavorful and easy. The aroma while cooking definitely causes some salivating.

Slow Cooker Crock Pot

Ingredients

  • 3-4 Tbsp
    chili powder
  • 1-2 tsp
    salt
  • 1/2 tsp
    pepper
  • 1/2 tsp
    cumin
  • 3-4 lb
    chicken thighs, skinless and boneless (chicken breasts don't work well)
  • 1 large
    onion, cut in wedges
  • 1/4 c
    fresh lime juice
  • 1/4 c
    fresh lemon juice
  • 4 clove
    garlic, minced
  • 1 can(s)
    diced green chiles (4 oz)
  • ·
    lime zest from 1/2 of a lime

How to Make Lime & Lemon Chili Chicken for the Crock Pot

Step-by-Step

  1. Rub the chicken down with the salt and spices and arrange in the Crock Pot.
  2. Add the garlic, onion, lime zest, and chilies.
  3. Pour juice over all the chicken.
  4. Cook on low for 5 hours in your Crock Pot.
  5. Top it off with fresh green onion or cilantro. I like to have a spread of sides from tortillas, cilantro-lime rice, sour cream, sauteed zucchini, tomatoes & jalapenos... the flavor possibilities are endless!
