- CORNISH HEN
- 1 whole cornish hen
- 2 tablespoons olive oil, extra-virgin
- 4 cloves garlic, minced
- 1 medium lemon, sliced
- 1 teaspoon paprika
- 1 teaspoon italian seasoning
- 1 teaspoon salt and pepper
- VEGETABLES
- 1 cup baby potatoes, halved
- 1 cup carrots, chopped
- 1 medium zucchini, sliced
- 1/2 medium red onion, sliced
How To Make lemon garlic roasted cornish hen with vegetables

Step 1Preheat your oven to 400 degrees F (204 degrees C). Pat the Cornish hen dry with paper towels and place it in the center of a baking dish or sheet pan.

Step 2In a small bowl, mix together the olive oil, garlic, paprika, Italian seasoning, salt, and black pepper. Rub the mixture all over the Cornish hen, including under the skin if possible. Stuff a few lemon slices inside the cavity and place the remaining slices around the pan.

Step 3Add the potatoes, carrots, zucchini, and onion around the hen. Drizzle the vegetables lightly with olive oil and season with salt and pepper.

Step 4Roast for about 55–65 minutes, or until the skin is golden and crispy and the internal temperature reaches 165 degrees F (74 degrees C). Halfway through cooking, spoon some of the juices over the vegetables and hen to keep everything flavourful and juicy.

Step 5Let the Cornish hen rest for 10 minutes before serving. Spoon the roasted vegetables and pan juices over top for extra flavour.
