  • CORNISH HEN
  • 1 whole cornish hen
  • 2 tablespoons olive oil, extra-virgin
  • 4 cloves garlic, minced
  • 1 medium lemon, sliced
  • 1 teaspoon paprika
  • 1 teaspoon italian seasoning
  • 1 teaspoon salt and pepper
  • VEGETABLES
  • 1 cup baby potatoes, halved
  • 1 cup carrots, chopped
  • 1 medium zucchini, sliced
  • 1/2 medium red onion, sliced

How To Make lemon garlic roasted cornish hen with vegetables

  • Step 1
    Preheat your oven to 400 degrees F (204 degrees C). Pat the Cornish hen dry with paper towels and place it in the center of a baking dish or sheet pan.
  • Step 2
    In a small bowl, mix together the olive oil, garlic, paprika, Italian seasoning, salt, and black pepper. Rub the mixture all over the Cornish hen, including under the skin if possible. Stuff a few lemon slices inside the cavity and place the remaining slices around the pan.
  • Step 3
    Add the potatoes, carrots, zucchini, and onion around the hen. Drizzle the vegetables lightly with olive oil and season with salt and pepper.
  • Step 4
    Roast for about 55–65 minutes, or until the skin is golden and crispy and the internal temperature reaches 165 degrees F (74 degrees C). Halfway through cooking, spoon some of the juices over the vegetables and hen to keep everything flavourful and juicy.
  • Step 5
    Let the Cornish hen rest for 10 minutes before serving. Spoon the roasted vegetables and pan juices over top for extra flavour.
