How To Make kickin chicken bombs

  • 1
    Pre heat oven to 375
  • 2
Then you need to flatten your chicken breast. Simply butterfly cut it and lay flat between parchment paper. I use a rolling pin to beat it thin. about 5 cm (guessing)
  • 3
Cut of tops, slice in half and remove seeds from the jalapenos. You can wash them if you prefer a more mild taste.
  • 4
Set Bacon aside. In a bowl mix together remaining ingredients except hot sauce until well incorporated.
  • 5
Fill jalapenos with cheese mixture dividing it evenly between the 8 half's. They should be heaping full.
  • What it should look like. I do actually put them closer together. It helps the filling to not ooze out as much.
    6
Place filled jalapeno in the center of the chicken breast and fold the chicken around the pepper. Wrap the bacon around the chicken and place on a baking sheet almost touching. You do not need to use toothpick to hold them together. Just make the bacon end on the bottom.

Bake @ 375 for about 45 min until oozing cheese and bacon is nicely browned
  • SUPER YUMMY!!

Optional end step: 5 mins before done brush chicken with Hot sauce. My family prefers Franks. You could also sprinkle a bit of shredded cheese on top with some chives
