How To Make hot & spicy cajun wings

Rinse chicken wings and fold them around the drummettes to form a triangle as pictured. Sprinkle half of Mr. Pete's Cajun Seasoning onto the wings. Rub seasoning into chicken. Using the remaining Mr. Pete's Cajun Seasoning, repeat seasoning and rub into meat. I never measure when seasoning, only because most of the seasoning falls off the chicken during sprinkling and sometimes in the fryer. That's why I like to apply a bit more to this dish. If you like your wings spicy like I do, make sure to use 6 tablespoons of Mr. Pete's Cajun Seasoning. If you cannot handle as much heat, use only 4 tablespoons. This recipe can be adapted to suit your personal tastes. Fry seasoned chicken in oil at 350 degrees approximately 6-8 minutes. Depending upon the size of your wings, cooking times will vary.

Making the Sauce: Melt butter in a skillet. Add garlic and hot sauce to pan. Stir until well blended and heated thoroughly and garlic becomes tender about 7 minutes. Note: Many believe that "Hot sauce is Hot sauce." I, on the other hand, do not. I think that each brand offers different flavors. For this recipe, I like to use Louisiana Hot Sauce, as it is mild and offers a bit of sweetness in the flavor. You may use any brand of hot sauce for this dish. Just note that it may alter the flavor of your wings.

Finally, place each chicken wing individually into the skillet and coat with sauce. Plate and serve with your favorite sauce(s). Here we used Ranch and Honey Mustard. I also leave a few of the wings plain without the hot sauce mixture for variety.
