This is much like the preparation for Chicken Parmesan... but twisted. I have seriously picky eaters and am constantly trying new things in hopes that they'll eat. This was a hit.

Blue Ribbon Recipe

There's nothing dry or boring about these chicken breasts. This is a superb family meal. It's delicious with herb-seasoned stuffing crumbs used as the crust. The chicken is slathered in gravy and baked with cheese until bubbly. Serve with pasta or over rice, and you have a meal your family will definitely be requesting again.

Ingredients For hillbilly chicken

  • 3
    boneless, skinless chicken breasts
  • 1 box
    stuffing mix, herb-seasoned (beat with a rolling pin until the consistency of bread crumbs), 6 oz
  • 1 pkg
    dry Italian salad dressing mix(for marinade)
  • 2 pkg
    chicken gravy
  • 4
    eggs (beaten for dredging)
  • Olive oil (for frying)
  • grated Italian cheese blend

How To Make hillbilly chicken

  • Patting dry chicken breasts.

    Rinse and pat dry breasts.
  • Rubbing chicken breasts with Italian seasoning.

    Rub with Italian dressing mix. Marinate for at least a few hours.
  • Pounding the chicken breasts thinner.

    Pound chicken breasts down as you would for chicken parmesan and cut in half. (Trust me... a half breast is a big portion for this recipe!)
  • Dredging chicken in egg and stuffing crumbs.

    Dredge in beaten eggs and stuffing crumbs.
  • Frying chicken until golden brown.

    Fry in olive oil until browned.
  • Preparing gravy packets.

    Prepare gravy according to instruction, but do NOT heat it.
  • Pouring some of the gravy into the baking dish.

    Pour about half of the gravy (cold) into the bottom of 9x13 pan.
  • Placing browned chicken on top of gravy.

    Place breading and browned chicken on top.
  • Adding remaining gravy to the pan.

    Pour remaining gravy over the top.
  • Topping chicken breast with shredded cheese.

    Top with about 1/4 cup of shredded Italian cheese on each breast.
  • Chicken baked until cheese is melted.

    Cover with aluminum foil and bake at 375 for 30 minutes. Gravy will have thickened and cheese will be melted.
  • Hillbilly Chicken served over pasta.

    No need to remove foil to brown. I served this with a green salad with hardboiled eggs and mixed veggies.
