I learned this recipe when I was in high school, from a mother whose children I babysat on a regular basis. It's so easy, and was one of the first meals I cooked for my future husband. I use boneless, skinless chicken breast now, but originally it was made with whole chicken breasts and thighs.

Ingredients For hawaiian chicken breast

  • 6-8
    boneless chicken breast halves
  • (or 1 cut up chicken)
  • 1 sm
    can crushed pineapple, drained
  • 1 sm
    bottle regular thousand island dressing (8 oz)

How To Make hawaiian chicken breast

    Preheat oven to 350 degrees. Arrange chicken pieces in baking dish that just fits their size, without too much space in between.

    Stir together pineapple and Thousand Island Dressing. Pour over chicken breasts.

    Bake, covered with foil, for 30 minutes. Remove foil and continue baking 20 - 30 more minutes, depending on thickness of chicken pieces, until chicken is well done and coating glistens.

    Serve with rice and stir-fried vegetables.
