Ingredients

  • FOR THE CHICKEN

  • 4-6
    boneless skinless chicken thighs or breasts (trimmed of visible fat)
  • 1/3 c
    soy sauce
  • 2 clove
    garlic, minced
  • FOR THE NOODLES

  • 1 pkg
    (8 oz.) glass noodles
  • 1/4-1/3
    head cabbage, very thinly sliced
  • 2 small
    carrots, cut into matchstick size
  • 1/2 c
    frozen english peas
  • 2 Tbsp
    peanut oil
  • 1 tsp
    minced ginger
  • 2 clove
    garlic, minced
  • 1/4 c
    chicken broth
  • 2 Tbsp
    soy sauce
  • 2
    green onions, sliced

How to Make Grilled Chicken over Stir-Fried Glass Noodles

Step-by-Step

  1. Gather and prep ingredients ahead of time!
  2. Place chicken in bag with soy sauce & garlic, marinate for a couple of hours.
  3. Remove chicken from marinate and grill over medium heat for about 8 minutes per side or until fully cooked. Set aside,. keep warm.
  4. Meanwhile, prepare glass noodles according to package directions. Rinse under cold water and set aside.
  5. Heat 2 Tbsp. peanut oil in wok or nonstick skillet.
  6. Add garlic and ginger. Stir-fry over medium high heat for 30 seconds or so.
  7. Add peas, carrots, and cabbage. Stir-fry 1 minute.
  8. Add noodles, chicken broth and soy sauce. Stir over medium heat until all ingredients are combined and heated through.
  9. To plate. Put a layer of noodles and veggies on plate. Slice 1 piece of chicken into strips and lay over top of noodles. Sprinkle with green onion. Serve!
