This chicken is moist, juicy and full of great flavor. I make a large batch and ust it as a main the first meal then use it to make chicken salad. It is really good!

Ingredients For grilled caesar chicken

  • 1 Tbsp
    garlic salt with parsley
  • 1 Tbsp
    onion powder
  • 1/2 tsp
    black pepper
  • 1/2 c
    italian dressing, lite
  • 1/2 c
    caesar dressing, lite
  • 1/2 c
    canola oil
  • 1/2 c
    olive oil, extra virgin

How To Make grilled caesar chicken

    Combine seasonings in small bowl & mix well. Rinse chicken, remove fat, skin & pat dry. *I buy boneless skinless chicken breasts & thighs*

    Sprinkle seasoning liberally over chicken & place in gallon ziplock baggie.

    In another bowl mix together both Italian & Caesar Dressing and pour into baggie over chicken. Zip shut and mix really well making sure to cover all of the chicken. Refrigerate for 2-24 hours. Overnight is better but a few hours works.

    Remove from fridge & add to the baggie 1/2C olive oil & 1/2C canola oil then place baggie in a microwave safe bowl to prevent leaking and par cook in microwave for 10 minutes while preheating grill on medium heat.

    Place chicken on grill and reduce heat to low, close the lid and cook chicken 2-4 minutes on each side. *I move it around once or twice just to be sure it isn't going to burn on the outside and still be raw on the inside. It's sensitive! Chicken is done when juices run clear.
