This is my twist on the traditional chicken fingers recipe. Big and small kids love them. :) You can vary the type of potatoe chips for differnt results... enjoy!

Ingredients

  • 1 1/2 c
    seasoned bread crumbs
  • 1 c
    potatoe chips (plain or flavored, my fave is sour cream and onion)
  • 3 large
    eggs
  • 1/8 c
    milk
  • 3 dash(es)
    garlic powder
  • 1 dash(es)
    italian seasoning
  • 1 1/2 lb
    boneless chicken breasts
  • 4 c
    vegetable oil

How to Make Gen's chicken fingers

Step-by-Step

  1. Crush potatoe chips and add to bread crumbs, mix thoroughly...

    Beat eggs with milk and add the seasoning while beating

    Trim and slice chicken as dersired (2 inch, 3-4 inch long strips)
  2. Dip chicken in egg mixture and coat in bread crumb potatoe chip mixture

    Deep fry over medium heat in vegetable oil until desired color (golden to dark brown) and chicken is cooked.

    Drain on paper towels and serve with favorite dipping sauce.
