As I have said in the past, I just make up recipes. I know what works, and what doesn't. I "eye" ingredients, except canned food. Family loves that I cook with what I have on hand. This is a Great Mexican Meal made in a skillet! I am partially Hispanic. Try it and Enjoy

Ingredients For fiesta chicken tomato beans and rice skillet

  • 2 lg
    chicken breasts- cooked and cubed
  • 1/2 lg
    yellow onion-chopped
  • 1 can
    10 oz diced tomatoes with green chilies
  • 3 tsp
    chili powder
  • 1-1/2 tsp
    cumin
  • 1 can
    black beans- rinsed and drained
  • 1 can
    corn-drained
  • 1 dash
    cayenne pepper
  • 1 tsp
    garlic salt with parsley flakes
  • 1-1/2 c
    white long grain rice
  • 2 c
    chicken broth
  • 1 c
    whole cherry tomatoes
  • shredded cheese
  • 2 c
    chicken broth

How To Make fiesta chicken tomato beans and rice skillet

    Dice up and cook Chicken breast. Heat 2 T Canola Oil in large skillet until no longer pink. Add in Chili Powder, Cumin, Cayenne, and garlic salt. Stir until combined.

    Add in Corn, Black beans and diced tomatoes with green chilies,Onions Stir to combined again.

    Add in rice and cherry tomatoes. Stir. Cover and Simmer on low heat until liquid is absorbed (about 12-15 min)

    Sprinkle on cheese. Replace lid until cheese is melted. Serve with Sour cream or wrap in a tortilla.
