This fajita recipe is such a time saver. Put all the ingredients in a slow cooker, turn it on, and forget about it. The chicken turns out tender and easy to shred. Once shredded, it goes back into the Crock Pot to mingle with the sauce. Spooned onto the tortillas, it makes really flavorful fajitas. These will be great if you're serving a crowd. Set up a fajita bar with the chicken and toppings and let everyone create their own.

    yellow onion, chopped
  • 1
    green or red bell pepper, chopped
  • 2 can
    diced mild green chilies (4.5 oz each)
  • 4 lg
    boneless skinless chicken breasts
  • fajita seasoning
  • 1 lg
    can mild green enchilada sauce (28 oz)
  • 16
    taco-sized soft flour tortillas
  • 2 c
    shredded cheddar cheese
  • sour cream

Every slow cooker is different. We suggest checking the chicken after 5 hours since some cook faster. Also, serve the chicken with a slotted spoon to remove the juices before placing it on the tortilla.
  • Onion and pepper in the Crock Pot.

    Add the onion and pepper to the bottom of a slow cooker.
  • Green chilies poured on top of peppers and onions.

    Add the green chilies.
  • Chicken breasts placed in the slow cooker.

    Arrange the chicken breasts on top.
  • Fajita seasoning sprinkled over the chicken.

    Sprinkle the fajita seasoning over the chicken.
  • Pouring enchilada sauce into the slow cooker.

    Top with the enchilada sauce.
