The nice thing about this dish is that you can prep it the day before, then cover, stick in fridge, and cook it the next day. Great tasting chicken and taters, from kitchen-to-table in under an hour. So, you ready… Let’s get into the kitchen.

  • THE TATERS
  • 1 lg
    potato, russet variety
  • 2 tsp
    olive oil, extra virgin variety
  • 1 - 2 pinch
    dried oregano
  • 1 - 2 pinch
    dried parsley
  • salt, kosher variety, fine grind, to taste
  • THE CHICKEN
  • 2 clove
    garlic minced
  • 2 Tbsp
    lemon juice, freshly squeezed
  • 1 tsp
    olive oil, extra virgin variety
  • 1 tsp
    salt, kosher variety, fine grind
  • 1/2 tsp
    black or white pepper, freshly ground
  • 1/2 tsp
    paprika, smoked variety, divided
  • 1/2 tsp
    dried oregano
  • 1/2 tsp
    dried thyme
  • 1 - 2 pinch
    cayenne pepper, or to taste

    For this recipe, you will need an ovenproof skillet, medium-size baking dish, or rimmed baking sheet.

    Gather your ingredients (mise en place).

    Place a rack in the middle position and preheat the oven to 425f (220c).

    THE TATERS

    Add the olive oil, oregano, parsley, and salt to a bowl.
  • 7
    Place a pot of lightly salted water over high heat and bring to a rolling boil. While the water is coming up to the boil cut the potato into cubes about 1.5 inches (4cm). Toss into the boiling water and cook for 5 minutes.

    Thoroughly drain, and then toss with the oil and spices.

    THE CHICKEN

    Add all of the spice ingredients to a bowl and mix to combine.
  • 11
    Place the chicken into an ovenproof skillet baking dish, or baking sheet, drizzle on the spice ingredients, and rub it into the chicken. Then, add the taters.

    As you can see from the photo, I like to sprinkle on a bit of additional smoked paprika and a touch of salt… up to you.

    Place in the preheated oven and cook until the skin on the chicken is crispy, and the internal temperature (instant-read thermometer) reads 165f (75c), about 45 – 50 minutes.
