Today for dinner I came up with something really good and hubby loved it so that's a plus.

We really loved this way to serve a chicken breast. Everything is fresh and yummy. The chicken breast comes out of the foil pack so juicy. Ingredients

  • CHICKEN

  • 2 to 4
    chicken breasts, boneless and skinless
  • 1/2 tsp
    black pepper
  • 1/4 tsp
    salt
  • 1 bunch
    (approximately 12 oz) fresh cilantro sprigs, stems left intact
  • 2
    small ripe plum tomatoes, finely chopped
  • 6-12 Tbsp
    olive oil (3 tablespoons over each chicken )
  • GUACAMOLE

  • 2
    Haas avocados
  • 1/2
    lime juice
  • 3 Tbsp
    chopped red onion
  • 1 clove
    garlic, chopped
  • 2 Tbsp
    chopped cilantro
  • 3 Tbsp
    chopped tomatoes
  • 1 pinch
    salt

How to Make Cilantro Guacamole Chicken

Step-by-Step

  1. Preheat over to 350. Sprinkle chicken with pepper and salt.
  2. Cut 2-4 pieces of heavy-duty foil (each large enough to enclose 1 breast half).
  3. Place chicken in center of each piece of foil. Put a couple of cilantro leaves on the side of chicken. Then put the 3 tablespoons of olive oil on the top of chicken.
  4. Fold foil over chicken and place on baking sheet.
  5. Cook for 45 minutes until no longer pink.
  6. While chicken is cooking, prepare guacamole.
  7. Remove cilantro from chicken; discard cilantro. Rewrap chicken to keep warm.
  8. To serve, place unwrapped chicken on serving platter and top with guacamole. Garnish with chopped tomatoes and enjoy. :)
