Today for dinner I came up with something really good and hubby loved it so that's a plus.

We really loved this way to serve a chicken breast. Everything is fresh and yummy. The chicken breast comes out of the foil pack so juicy. It's a little on the plain side but the guacamole on top is what adds tons of flavor. This is a delicious and healthy way to serve chicken.

Ingredients For cilantro guacamole chicken

  • CHICKEN
  • 2 to 4
    chicken breasts, boneless and skinless
  • 1/2 tsp
    black pepper
  • 1/4 tsp
    salt
  • 1 bunch
    (approximately 12 oz) fresh cilantro sprigs, stems left intact
  • 2
    small ripe plum tomatoes, finely chopped
  • 6-12 Tbsp
    olive oil (3 tablespoons over each chicken )
  • GUACAMOLE
  • 2
    Haas avocados
  • 1/2
    lime juice
  • 3 Tbsp
    chopped red onion
  • 1 clove
    garlic, chopped
  • 2 Tbsp
    chopped cilantro
  • 3 Tbsp
    chopped tomatoes
  • 1 pinch
    salt

How To Make cilantro guacamole chicken

  • Salt and pepper sprinkled on chicken.

    Preheat over to 350. Sprinkle chicken with pepper and salt.
  • Four pieces of aluminum foil cut.

    Cut 2-4 pieces of heavy-duty foil (each large enough to enclose 1 breast half).
  • Chicken and cilantro placed on a piece of aluminum foil.

    Place chicken in center of each piece of foil. Put a couple of cilantro leaves on the side of chicken. Then put the 3 tablespoons of olive oil on the top of chicken.
  • Foil packets closed.

    Fold foil over chicken and place on baking sheet.
  • Chicken baking in the oven.

    Cook for 45 minutes until no longer pink.
  • Prepared guacamole in a bowl.

    While chicken is cooking, prepare guacamole.
  • Removing cilantro from foil packet.

    Remove cilantro from chicken; discard cilantro. Rewrap chicken to keep warm.
  • Chicken topped with guacamole and tomatoes.

    To serve, place unwrapped chicken on serving platter and top with guacamole. Garnish with chopped tomatoes and enjoy. :)
