From time to time, one will have a guest, or guests who do not enjoy nor appreciate highly seasoned and/or hot, hot, hot tasting recipes; especially chili. My objective, therefore, in developing this chili is to provide for guest(s) who fall into this category. So then, without sacrificing flavour, and to ensure these wimpy guests receive an invitation to the party, I have combined seasonings which are compatible with basic ingredients on their own, or in tandem, to provide a chili worthy of guests whose tastes are neither left, nor right, but right down the middle of the "Heat-O-Meter".

Ingredients For chili - quick, easy without sacrificing flavour

  • 2 lb
    ground beef, or chicken, or turkey
  • 4
    fresh shallots, sliced and chopped
  • 1 can
    19 oz., red kidney beans
  • 2 Tbsp
    chopped garlic
  • 1/4 c
    italian parsley, chopped fine
  • 2 Tbsp
    mixed, chopped, dried, italian herbs
  • 2 Tbsp
    ground ginger
  • 1 tsp
    poultry seasoning
  • 1/3 c
    barbeque sauce
  • 1/3 c
    dry red wine
  • -
    water, as required

How To Make chili - quick, easy without sacrificing flavour

    In a deep pan, over high heat, brown ground beef (chicken or turkey). Mix well; do not allow meat to burn. Drain meat and set aside for later use. Discard grease from pan, save a couple of tablespoons for additional browning.

    Add chopped shallots to pan, and clarify. Shallots should absorb the drippings; if not, drain and remove shallots when clarified. Add chopped garlic to shallots. Stir in meat mixture.

    Add Red Kidney Beans with its juice to the mix... Turn down heat to medium and allow to cook for 5 - 10 mins, stirring all the while.

    Add Ginger; Chopped Parsley, Mixed Italian Herbs; Poultry Seasoning; Stir well to blend.

    Add the barbeque sauce; and the wine. Cover pan and allow to reach boil point again. Turn down heat to low, cover pan and continue to simmer for one hour.

    Stir periodically. Check liquid level; do not allow to dry out; add additional liquid (water) as required.

    When ready to serve, sprinkle with grated or shredded cheese. You may want to add a dollop of sour cream. You may prefer a combination of all three; That would be very tasty... Serve with crusty bread, crackers, bread sticks or any other carbs as you prefer.
