My husband and I both love this as a main dish salad. What could be easier, especially on a busy day or a hot day!

What a delicious Waldorf salad. We loved the addition of chicken. Not traditional, but makes the salad more of a meal. There are no overpowering herbs or seasoning in this salad. It has the perfect balance of sweet and savory with just the right amount of crunch. Using canned chicken means you can make this in a pinch, but we think it would be even better with a rotisserie chicken from the deli. This chicken Waldorf salad is the perfect light lunch in the hot summer months.

Ingredients For chicken waldorf salad

  • 2 c
    coarsely chopped chicken or 2 cans chicken meat
  • 1/2 c
    mayonnaise
  • 1 md
    red apple, chopped in about half inch pieces
  • 1/2 c
    thinly sliced celery
  • 1/4 c
    chopped walnuts or pecans
  • 2 Tbsp
    raisins
  • 8 oz
    can pineapple tidbits, drained
  • 1/2 c
    halved red grapes
  • French bread for serving (optional)
  • large lettuce leaves for serving

How To Make chicken waldorf salad

  • All the ingredients added to a bowl.

    Mix all ingredients and refrigerate.
  • Salad mixed together and placed on a plate with fruit.

    Serve each helping on a lettuce leaf on individual plates. I served this with only a warmed French bread baguette.
