I have catered a few parties and weddings, and this is a favorite. Simple and easy to make.

Ingredients

  • 2- 15 oz. can(s)
    cooked, white meat chicken (or your own leftover)
  • 2 Tbsp
    mayonnaise (dukes is best but not in all areas)
  • 1 small
    onion, diced fine. i use vadallia or sweet.
  • 1/2 tsp
    each of salt and pepper to taste
  • 1/2 tsp
    garlic powder

How to Make Chicken Salad Croissants

Step-by-Step

  1. In a medium mixing bowl combine chicken, mayonaisse, onion, salt and pepper and garlic powder. Mix well until chicken is well blended.
  2. Slice open 12 croissants and spread with chicken salad. Double recipe and use 24 mini croissants.
