This is an extremely easy way to make chicken pot pie when you want comfort food and you'll make it again and again. It has all the flavors of a creamy chicken pot pie but in an easy to make casserole. The Bisquick topping has a little bit of crunch on the outside and a pillowy soft inside. We could eat multiple plates of this dish.

Ingredients For chicken pot pie casserole

  • FILLING
  • 1 lb
    boneless, skinless chicken breasts
  • 1 can
    cream of chicken soup (10.5 oz)
  • 1/2 can
    milk (soup can)
  • 2 can
    mixed vegetables, drained (14.5 oz each)
  • salt and pepper, to taste
  • CRUST
  • 2 1/4 c
    Bisquick
  • 2/3 - 1 c
    milk

How To Make chicken pot pie casserole

  • Preheating the oven.

    Preheat the oven to 350 degrees F.
  • Chicken breasts baking in the oven.

    To make the filling, season the chicken as desired and grill or bake until just cooked through.
  • Chunks of chicken in a casserole dish.

    Cut the chicken into chunks and place them in the bottom of a 9x13 pan.
  • Soup, milk, vegetables, salt, and pepper mixed in with the chicken.

    Add the soup, 1/2 can of milk, vegetables, salt, and pepper. Mix well. (If desired, you can mix these in a separate bowl and pour it into the pan, but this method makes for fewer dishes to wash later.)
  • Bisquick biscuit batter in a bowl.

    Next, make the crust. Combine the Bisquick and milk as directed on the package. Add a little more milk as needed until you get a soft, sticky dough.
  • Biscuit batter spooned onto the veggie mixture.

    Drop the biscuit mixture by the teaspoonful on top of the filling mixture.
  • Non-stick spray sprayed on the biscuit.

    To keep the biscuits from browning too quickly, spray the tops with non-stick cooking spray.
  • Pan covered with foil and baking in the oven.

    Cover the pan with foil. Bake in a 350 degree F oven for a total of 30-35 minutes.
  • Continuing to bake so the biscuits brown.

    Uncover for the last 10 minutes to brown the biscuits.
