Great for a chilly day over seas! Simple and easy to find ingredients. Makes you feel like you're home when you're 1000s of miles away!...currently posting this from a stint abroad(in Japan). Hope you all enjoy!

Ingredients For chicken chili

  • 1 1/2 c
    onion (chopped)
  • 3/4 c
    green and/or red bell pepper (chopped)
  • 2 clove
    garlic (minced)
  • 2 Tbsp
    vegetable oil
  • 1 1/2 - 2 lb
    chicken breast (cubed)
  • 1 Tbsp
    chili powder
  • 1 1/2 tsp
    cumin
  • 1/4 tsp
    cayenne pepper (1/2 if you like it spicy)
  • 1 tsp
    ground coriander
  • 1/2 tsp
    salt
  • 1 can
    diced tomatoes (with liquid) 14.5oz
  • 1 can
    tomato paste 6oz
  • 1 can
    chicken broth 10.5oz
  • 1/2 c
    water
  • 1
    bay leaf
  • 1 can
    garbanzo beans, drained and rinsed 15oz

How To Make chicken chili

    In a large pot, cook onion, green/red pepper and garlic in oil over medium-high heat for 10 minutes or until onion is tender. Add chicken; cook and stir constantly for 4 minutes or until browned. Add the next 10 ingredients; bring to a boil. Reduce heat; cover and simmer, stirring occasionally, for 40 minutes.

    Add beans; cook, uncovered, for 20 minutes, stirring occasionally. Remove bay leaf.

    Serve and top, if you desire, with shredded cheese, sour cream, etc.
