My inspiration for this was a recipe for chicken breasts stuffed with sliced almonds and dried apricots. I made it my own way using the ingredients I already had - pecans and dried cherries.

Stuffing a chicken breast is easy to do and elevates basic chicken. This version is stuffed with a creamy herb goat cheese and sweet, tart dried cherries. It's encrusted with a pecan crust. The chicken turns out perfectly moist and tastes amazing with the creamy cherry pecan filling. This is easy enough to prepare for a family dinner but can also be served as a fine dining dish.

Ingredients For cherry pecan stuffed chicken breasts

    boneless skinless chicken breast halves
  • 1
    egg, lightly beaten
  • 1/2 c
    plain bread crumbs
  • 1/3 c
    pecan chips
  • salt and pepper
  • STUFFING
  • 1/4 c
    dried cherries
  • 1/4 c
    pecan chips
  • 3 oz
    chevre (goat cheese)

How To Make cherry pecan stuffed chicken breasts

  • Cutting a slit in the chicken breasts.

    Preheat oven to 375 degrees. Using a small sharp knife, cut a slit in each chicken breast to create a pocket about 4 inches long.
  • Stuffing ingredients in a bowl.

    In a small bowl, combine the stuffing ingredients.
  • Adding stuffing to the chicken breast.

    Stuff each breast with one quarter of the mixture.
  • Stuffed chicken seasoned with salt and pepper.

    Season with salt and pepper.
  • Bread crumbs and pecans on a plate.

    On a plate, combine the bread crumbs and pecan chips.
  • Dipping chicken into the egg.

    Dip each piece of chicken into the egg.
  • Dredging chicken in bread crumb mixture.

    Then dredge in the bread crumb mixture.
  • Cooking chicken in the skillet.

    Heat a little oil in a large nonstick oven-proof skillet over medium heat. Cook chicken on each side for 3-4 minutes.
  • Transferring partially cooked chicken to the oven.

    Transfer to the oven and bake for 16 to 20 minutes, or until chicken is cooked through.
