I found this recipe and decided to change it up a little bit. Everyone I have made this for absolutely loves it! So many flavors and just the right amount of juiciness for this chicken dish.

Even picky eaters are going to love this stuffed chicken recipe. The combination of cheese is very savory and flavorful. There's just enough fresh garlic to add a pop of flavor but not be overpowering. Rolling the chicken in melted butter, then coating with bread crumbs, crisps up when baked, and helps to keep the chicken breasts juicy. This will be a big hit with your family.

  • 8
    large, thick chicken breasts (boneless/skinless)
  • chopped garlic, to taste
  • 1 c
    shredded mozzarella cheese
  • 1 c
    shredded Parmesan cheese
  • 2 c
    Italian seasoned bread crumbs
  • 1/2 c
    butter, melted (I like to use salted butter)
  • toothpicks or short skewers
  • sweet basil, to taste (I added this for a little extra flavor)

The bottom of the chicken does get a little soggy but it's still good. To remedy that, put a wire cooling rack on your baking tray and bake the chicken on that. The air will circulate and crisp the bottom of the chicken.
  • Butterflied chicken breast on a cutting board.

  • Shredded cheese on the butterflied chicken.

    Stuff inside with both cheese's on the breast.
  • Adding garlic to the cheese.

  • Sprinkling basil on the chicken.

    Sprinkle with sweet basil before closing up and securing with toothpicks or short skewers. (Make sure you have secured the opening because the next step is to roll in butter and bread crumbs.)
  • Rolling chicken in butter.

    Melt the butter in a flat dish with sides so you can still roll the chicken in it.
  • Rolling buttered chicken in bread crumbs.

    Then roll in bread crumbs.
  • Coated chicken on a baking sheet.

    Place them in a baking dish or pan.

    Pour remaining butter, or melt a little more, over the chicken.
