Ingredients

  • 1/2 c
    olive oil
  • 2 large
    red pepper
  • 1/3 c
    lemon juice
  • 2 large
    green peppers
  • 2 Tbsp
    chopped italian parsley
  • 3/4 tsp
    salt
  • 1 Tbsp
    dried oregano
  • 1/8 tsp
    pepper
  • 3 1/2 lb
    broiler/fryer chicken
  • ·
    lemon slices

How to Make BAKED LEMON CHICKEN WITH PEPPER

Step-by-Step

  1. Combine all ingredients except chicken and vegetables.
  2. Add chicken and marinate at room temperature for 1 hour, turning once.
  3. Drain and bake chicken at 400 degrees for 35 minutes.
  4. Cut peppers into 1/2-inch thick rings.
  5. Saute 8 minutes.
  6. Spoon peppers around chicken.
  7. Makes 4 to 6 servings.
  8. Any leftovers can be made into chicken soup.
