I am half Puerto Rican and half Colombian, I have mixed both of my cultures to make an exquisite dish called Rice and Chicken. It is wonderful if you cook a Puerto Rican kidney been stew over it as well for change.

Ingredients For arroz con pollo

  • 2 Tbsp
    olive oil
  • 1/2 md
    onion, vidalia, peeled
  • 1/2 md
    green pepper
  • 3/4 bunch
    cilantro, fresh
  • 2 tsp
    sofrito
  • 1/2 tsp
    minced garlic
  • 1/2 can
    tomatoe sauce
  • 1 Tbsp
    adobo powder
  • 2 pkg
    sazon seasoning packs
  • 1 can
    corn
  • 2 c
    rice
  • 4 c
    water
  • 1 tsp
    salt
  • 1 tsp
    black pepper
  • 2 lg
    chicken breast halves, skinless and boneless

How To Make arroz con pollo

    Pour over 2 table spoons of olive oil into a medium pot over medium high heat, put 1/2 diced onion, 1/2 diced green peeper, 1 tbsp. of adobo, 2 packages of sazon seasoning packs, 1/2 tsp. on minced garlic, 1/2 small can of tomatoe sauce and seer until you can smell the vegetables cooking.

    Cut chicken breast into small cubes and add to vegetables to seer.

    Once vegetables and chicken are well seared, you add 2 cups of rice and 4 cups of water, add 1 tsp. salt or to taste 1 tsp. black pepper to taste.

    Stirring it very well, bring to a boil for 2 to 3 minutes then cover for 27 minutes, open stir and cover let sit for about 5 minutes, then serve.
