o2 easy chicken & stuffing with gravy
This is a simple, yet yummy, casserole made with common pantry items. Whether you're craving comfort food, or in somewhat of a rush to put dinner on the table, this fills the bill. When served with cranberry sauce on the side, it just might remind you of Thanksgiving.

1 canchunk chicken breast (12.5 oz.), drained

2 cancream of chicken soup

1 soup canchicken broth

1 pinchground black pepper

1 boxstuffing mix, herb-seasoned chicken or turkey flavored

parsley for garnish, dried or fresh (optional)
How To Make o2 easy chicken & stuffing with gravy

1Gather ingredients. Preheat oven to 350 degrees F. Use cooking oil spray, or butter, to lightly grease a smaller size casserole dish (I think mine is 7"x11".)

2Drain chicken well. (I discard drained juice because it's a bit too salty.)

3Empty 2 cans of cream of chicken soup into average mixing bowl.

4Fill one of the empty soup cans with chicken broth. Combine broth with the soup by adding a little at a time and stirring well. Repeat until all of the broth is stirred into soup and no lumps remain.

5Stir in a good pinch/dash of pepper.

6Add about 5 or 6 large spoonfuls of the soup mixture to prepared dish; smooth to lightly cover entire bottom of dish.

7Evenly sprinkle 1/2 the bag of seasoned stuffing mix over dish.

8Break the canned chicken into small, bite-sized pieces, then evenly distribute over the stuffing mix layer.

9Evenly sprinkle remainder of stuffing mix over the chicken.

10Pour and smooth remainder of soup mixture over the chicken and dressing to cover all.

11Cover with foil. Bake at 350 degrees F for one hour.

12Sprinkle a bit of parsley on top for garnish if desired. Serve hot. Cover and refrigerate leftovers.

13Note: To make the recipe go a little further, or if you just like a lot of chicken, add 2 cans of drained chicken instead of one.
