Ingredients For mexican skillet supper

  • 1 lb
    lean ground beef
  • 1/2 c
    chopped onion
  • 1 - 14.5 oz
    can stewed tomatoes
  • 1-15 oz
    can black beans (drained)
  • 1 Tbsp
    oil
  • 2 Tbsp
    ground cumin
  • 1 Tbsp
    chile powder
  • 2 c
    cooked rice
  • 1
    avocado, sliced
  • scallions or cilantro for garnish

How To Make mexican skillet supper

    Preheat oven to 350ºF
  • 2
    In a heavy-bottom skillet, add oil, beef and onions; cook on medium heat until meat is no longer pink
  • 3
    Drain beef and onion mixture; add back into the skillet; add stewed tomatoes with juice; allow combination to cook until tomatoes are tender

    Add ground cumin and chile powder to mixture; combine well
  • 5
    In a separate pan, prepare rice according to directions
  • 6
    Once rice is done, add it to the beef/tomato/bean mixture; combine well; taste for salt and pepper

    Top with shredded cheese and bake for 10-15 minutes, or until cheese has melted

    Garnish with cilantro, scallions and/or avocado
