When I first got this recipe from my sister I didn't know what to think - I'd never had chips cooked into a dish and was very skeptical. But I tried it, and it's been a family favorite ever since. It's just one of those dishes that defines comfort food... it's hot, cheesy, fill you up food.

Ingredients

  • 2-3 boneless, skinless chicken breast
  • 1 can cream of mushroom soup
  • 1 can cream of chicken soup
  • 8 ounces sour cream
  • 2 tablespoons oil, whatever you prefer to cook with
  • 1 small onion, diced
  • 3/4 bag tortilla chips, crushed (not too finely)
  • 3 cups cheddar cheese, shredded, divided

How To Make chicken casserole

  • Step 1
    Preheat oven to 350.
  • Step 2
    Cut chicken into bite size pieces. Season Chicken. (use your favorite seasonings - I use salt, pepper, garlic powder & seasoning salt)
  • Step 3
    Heat oil in a pan over medium high heat. Add chicken & onions. Saute until chicken is cooked though. 8-10 minutes
  • Step 4
    In casserole dish mix soups, sour cream, half the cheese and crushed chips.
  • Step 5
    Add cooked chicken to casserole dish, mix together
  • Step 6
    spread remaining cheese on top
  • Step 7
    Bake 20-30 minutes, until cheese is melted and bubbly, and heated all the way though.
