While delicious, cabbage rolls are time-consuming to prepare. This cabbage roll casserole has all the same flavors of cabbage rolls, without all the fuss. The seasoning is well balanced with the tomato, rice, and meat mixture. Cayenne pepper adds the perfect amount of heat (but that can easily be omitted). We loved all the layers of cheesy goodness. It will become one of your favorite go-to dinner meals. Thanks to the cabbage, it is ideal for New Year's Day or St. Patrick's Day.

Ingredients For cabbage roll casserole

1 lblean ground beef

1 mdonion, chopped

3 clovegarlic, minced

1/2 tsppaprika

1/2 tsponion powder

1/4 tspground cayenne pepper

2 Tbspbrown sugar

1 cantomato sauce (15 ounce)

1 canlow sodium beef broth (14.5 ounce)

1 clong grain white rice, uncooked

2 Tbspolive oil
-
1 mdhead green cabbage, chopped

1 1/2 cfinely shredded sharp cheddar
-
1 1/2 cfinely shredded Monterey Jack cheese
How To Make cabbage roll casserole

1Preheat oven to 350 degrees. Spray 9×13 inch casserole dish with nonstick cooking spray or olive oil spray.

2Brown ground beef. When the ground beef is about halfway browned add the onion; cook until the beef is fully browned. Reduce the heat to low. Add the garlic and cook for 1 minute stirring continuously. Drain any excess fat from the skillet.

3Add paprika, onion powder, cayenne, brown sugar, tomato sauce, beef broth, and rice. Bring the mixture to a low boil. Turn to simmer and cover with lid. Simmer for 20 minutes until rice is tender.

4Heat 1 tablespoon olive oil in a large skillet over medium heat. Add 1/2 of the chopped cabbage and cook until slightly tender; 5-7 minutes.

5Spread cabbage over the bottom of the casserole dish.

6Top with 1/2 of the ground beef mixture.

7Sprinkle with 1/2 of the cheeses; blending them.

8Heat 1 tablespoon olive oil in a large skillet over medium heat. Add the other 1/2 of the chopped cabbage and cook until slightly tender; 5-7 minutes.

9Spread the cabbage over the cheese in the casserole dish. Top with the other 1/2 of the beef mixture and then with the remaining cheese.

10Cover the casserole with aluminum foil and bake for 20 minutes.

11Remove the foil and bake for another 20 minutes or until the cheese is lightly browned.
