Not overly sweet and with no jam this meal is a regular in our home. I can have this on the table in 30 minutes. This re-heats really well and is even better the next day. Can be served with rice, buttered noodles or mashed potatoes.

Ingredients For betty's apricot chicken

    chicken thighs, chopped into quarters
  • 1
    large onion, chopped
  • 1 can
    apricot nectar
  • 1 can
    cream of chicken soup
  • 1
    sachet french onion soup mix
  • 1/2 c
    water

How To Make betty's apricot chicken

    In a large heavy based saucepan, heat a little oil and fry the chicken until browned. Add the onion and cook for 2 - 3 minutes or until translucent.

    Add the remaining ingredients (use the water to get all the last little bits from the two cans).

    Turn heat to low and simmer for 20 minutes, stirring at least twice.
