I came up with this recipe when I bought the wrong kind of beans at the store. I wanted butter beans and I bought lima beans and the taste is just not the same. So I had no use for the lima beans and did not like the taste until this recipe. I also did not have any cheddar cheese on hand so I used what I had and it came out great with the white cheeses and the two slices of yellow cheese I did have made a nice topping. I hope you will enjoy my recipe!

Ingredients For au gratin potatoes with smoked ham and lima beans

  • 2-3 md
    white potatoes peeled & sliced
  • 2 slice
    ham *tip: if you don't have smoked ham just add smoke flavoring to the chopped pieces of ham
  • 1 sm
    white onion sliced
  • 1 c
    lima beans frozen
  • 1 c
    mozzarella cheese grated
  • 1/2 c
    monterey jack cheese grated
  • 2 slice
    american cheese cut into strips
  • 3 dash
    japones dried chili's or crushed chili peppers i use japones
  • 3 dash
    garlic powder
  • 3 dash
    black pepper
  • 1 c
    milk
  • 1 Tbsp
    flour or 1 tsp flour & 1 tsp country gravy mix for added flavor
  • 1
    layer of pre-made stove top chicken stuffing on the bottom (optional)
  • grated dried or fresh parmesan cheese for the top

How To Make au gratin potatoes with smoked ham and lima beans

    In a glass 1 1/2-2 quart glass casserole dish first layer onion, then stuffing, then potatoes, lima beans, & ham, mozzarella & jack cheeses, then give each layer a dash of the garlic powder and black pepper and the red reppers.

    On the top layer lay the strips of yellow cheese and add a handful of the chopped ham then sprinkle with Parmesan Cheese.

    Bake covered at 400 degrees in a preheated oven for 40 minutes then uncover and bake another 20 minutes. Delicious, the lima beans goes great with this dish and a good way to eat them lima beans.
