My mom made a chicken casserole while I was visiting in NC. It was not one she's ever made before or since, that I know of. This is my pieced together version based on what it tasted like. So good! Perfect comfort food!

Ingredients For another delicious chicken & riceroni casserole

1 lbboneless, skinless chicken breasts, diced

2 boxchicken flavored riceroni, cooked according to pkg directions

1 box(10 oz.) chopped broccoli
-
1 cancream of chicken soup
-
1 cancream of mushroom soup
-
1 bag(8 oz.) shredded, mild cheddar cheese
How To Make another delicious chicken & riceroni casserole

1boil chicken until very tender and finely dice. Meanwhile, boil broccoli until very soft, drain well and set aside.

2In a large bowl, combine chicken, riceroni, and broccoli. Combine soups and pour over chicken mixture. Mix well.

3Preheat oven to 350 degrees and spray a 9 X 13 casserole dish with cooking spray. Pour in chicken mixture and smooth out. Sprinkle cheese evenly on top and cover with foil.

4Bake covered for 20 minutes. Remove foil and bake for another 10 minutes or until cheese is lightly browned. Remove from oven and let stand for 5-10 minutes before serving.
