meatloaf meets cheeseburger

Meat loaf is always a winner. But so is the cheeseburger. So why not combine them ? We like to stuff these with whatever sounds good at the moment ... sometimes he likes some spicy some peppers inside his .. sometimes I like a few pieces of pineapple. We have done these with pepperoni inside .. oh yum !! Whatever strikes your fancy will work !

Ingredients For meatloaf meets cheeseburger

    slices thick bacon
  • 1-1/2 lb
    ground beef - 80/20
  • 1/3 c
    finely chopped onion
  • 1/2 tsp
    ea of garlic powder, onion power and paprika
  • 1/2 c
    finely crushed saltine crackers
  • 2 Tbsp
    yellow or stone ground mustard
  • 2 Tbsp
    ketchup
  • 1 Tbsp
    mayonnaise (not miracle whip)
  • 1
    egg - lightly beaten
  • 3/4 c
    shredded sharp cheddar cheese
  • 1/2 c
    shredded monterey jack or pepper jack cheese
  • 1/3 c
    chopped dill pickles (or bread and butter if you prefer) - dried well
  • 1/3 c
    chopped tomatoes - seeded
  • bbq sauce
  • salt and pepper
  • ----- for the sauce -----
  • 4
    thick slices bacon chopped finely
  • 1/4 c
    chopped onion
  • 1 tsp
    brown sugar
  • 1 tsp
    worcestershire sauce
  • 1/2 c
    ketchup
  • 1/4 tsp
    pepper
  • 2 Tbsp
    filtered water
  • a couple of drops of liquid smoke

How To Make meatloaf meets cheeseburger

    Preheat oven to 375. Line a baking dish - 11 x 13 - dish with parchment paper then spray lightly with cooking spray. Set aside.

    Cook the 4 slices of bacon until just short of crispy. It should still be pliable. Lay on paper towel and set aside.

    Place the ground beef into a medium sized bowl and break it into small pieces. Add onion, garlic powder, paprika, onion powder and cracker crumbs. Mix well. Add mustard, ketchup, mayonnaise and egg to the beef mixture and mix together until well incorporated.

    Divide the meat mixture into 12 sections. (NOTE) You can make these any size you like .. large or slider size ! If you are making them smaller then you will have more patties .. larger burgers will yield fewer patties. Take 1 section and form it into a thin patty. Repeat with the remaining sections.

    Sprinkle come of the cheddar cheese on top of half of the patties to within about 1/2" of the edges all the way around. Top the cheddar cheese with some chopped pickles, then some chopped tomatoes. Finally sprinkle some of the jack cheese on top of all.

    Take one of the extra patties and place it on top of the prepared burger and seal the edges well. Repeat until all are complete.

    Then carefully transfer the patties to your prepared baking dish. Brush with BBQ sauce then lay 2 slices of bacon on top of each completed burger.

    Bake - uncovered - for about 15 - 20 minutes or until thermometer reads 160°F.

    Remove from oven, brush with additional BBQ sauce then allow it to sit for about 10 minutes before serving.

    While the burgers are resting, make the warm bacon onion sauce.

    In 8-inch skillet, cook bacon until browned. Remove to paper towel to drain but leave the bacon drippings in the skillet.

    Add onion and brown sugar to the drippings in the skillet. Turn burner to low and cook - stirring frequently - for about 3 minutes or until the chopped onions are tender. Stir in Worcestershire sauce, ketchup, pepper, filtered water and liquid smoke and heat through.

    Remove from heat and pour into a condiment bowl. Slather the warm sauce on buns or use as a topping for burgers or hot dogs.

    Place your new creation on a bun and seriously enjoy the heck out of it !
