I make this quite often because it is so simple. I like to make it ahead so we can just enjoy the day and then come in and pop it in the oven. Its so good with a summer salad and a cool drink. Oh so refreshing. I hope you like it.

Ingredients For zelda's green enchilada casserole

  • 2 lb
    ground beef
  • 1 lg
    onion, chopped
  • 2 tsp
    chili powder
  • 1 tsp
    salt
  • 1 tsp
    garlic powder
  • 2 c
    cheddar cheese, shredded [ i use more cheese]
  • 1 can
    evaporated milk [13oz]
  • 1 can
    cream of mushroom soup
  • 1 can
    mild or spicy green chili's, small can
  • 1 pkg
    flour tortillas
  • 1 can
    green enchilada sauce

How To Make zelda's green enchilada casserole

    Cook ground beef, onion, chili powder, salt and garlic in iron skillet without shortening until done and well browed. Mix milk, soup, chilies, and enchilada sauce in bowl while meat is cooking. Quarter tortillas and line 9x13 pan. Cover with 1/3 of meat mixture, a layer of cheese, and a layer of soup. Alternate layers until all is used. Bake at 350 degrees for 30 minutes. Remove and cover top with extra cheese and chopped green onion. Return to oven until cheese melts.
