My mother was quite the cook! My father & I loved her creativity in the kitchen! Mom was fighting breast cancer ('68-'77), and was able to make some incredible meals, even if she wasn't feeling well! After she passed away, I found her old, tin, "Family Circle" Recipe Box, and found this favorite of my childhood.

Ingredients

  • 1 lb
    ground beef
  • 1.5 c
    chopped onion
  • ·
    salt
  • ·
    pepper
  • 1.5 c
    milk
  • 3/4 c
    biscuit mix
  • 3
    eggs
  • 1
    tomato, sliced
  • 1 c
    cheddar cheese, shredded

How to Make Yvonne's Cheeseburger Pie

Step-by-Step

  1. Heat oven to 400 degrees.
  2. Grease pie plate.
  3. Brown beef and onion; drain well.
    (I rinse my ground beef in a collander--reduces the fat content of the dish.)
  4. Stir in salt and pepper.
  5. Spread in plate.
  6. Beat milk, baking mix and eggs until smooth, 15 seconds in blender on high or 1 minute with hand beater.
  7. Pour into place.
  8. Bake 25 minutes.
  9. Top with tomatoes; sprinkle with cheese.
  10. Bake until knife inserted in center comes out clean 5-8 minutes.
  11. Cool 5 minutes prior to serving.
  12. *My add-ons to mom's recipe:
    To add a "Texas" kick, add a litte chili powder, OR some chopped jalepenos.
    You can also top it off with a dollop of Sour Cream (I prefer "Daisy") & some Pico de Gallo.
    Or add some cooked, crumbled Bacon to the beef mixture~!
