My mother was quite the cook! My father & I loved her creativity in the kitchen! Mom was fighting breast cancer ('68-'77), and was able to make some incredible meals, even if she wasn't feeling well! After she passed away, I found her old, tin, "Family Circle" Recipe Box, and found this favorite of my childhood.

Ingredients For yvonne's cheeseburger pie

  • 1 lb
    ground beef
  • 1.5 c
    chopped onion
  • salt
  • pepper
  • 1.5 c
    milk
  • 3/4 c
    biscuit mix
  • 3
    eggs
  • 1
    tomato, sliced
  • 1 c
    cheddar cheese, shredded

How To Make yvonne's cheeseburger pie

    Heat oven to 400 degrees.

    Grease pie plate.

    Brown beef and onion; drain well. (I rinse my ground beef in a collander--reduces the fat content of the dish.)

    Stir in salt and pepper.

    Spread in plate.

    Beat milk, baking mix and eggs until smooth, 15 seconds in blender on high or 1 minute with hand beater.

    Pour into place.

    Bake 25 minutes.

    Top with tomatoes; sprinkle with cheese.

    Bake until knife inserted in center comes out clean 5-8 minutes.

    Cool 5 minutes prior to serving.

    *My add-ons to mom's recipe: To add a "Texas" kick, add a litte chili powder, OR some chopped jalepenos. You can also top it off with a dollop of Sour Cream (I prefer "Daisy") & some Pico de Gallo. Or add some cooked, crumbled Bacon to the beef mixture~!
