Wumkees (Individual Meat Loaves)

I created this recipe in the late 1970's to steer away from the traditional meat loaf baked in the oven. This is stove top and far easier. For some reason, my late Dad called them "Wumkees".

  • 8 oz
    stewed tomatoes
  • 1/2 c
    beef broth (divided)
  • 1-1/2 lb
    ground beef, turkey or pork
  • 1/2 c
    italian bread crumbs
  • 1/2 c
    parsley flakes
  • 1
    egg, beaten
  • 1/4 c
    red onion, finely chopped
  • 1 tsp
    smoked paprika
  • 1 tsp
    ground cumin
  • 1 tsp
  • 1/2 tsp
    black pepper
  • 1 Tbsp
    olive oil
  • 1/4 c
  • 1 tsp
    dijon mustard
  • 1/2 c
    barbecue sauce

How to Make Wumkees (Individual Meat Loaves)


  1. Combine tomatoes and1/4 cup broth with meat, bread crumbs, parsley, egg, onion and seasonings in large bowl. Mix thoroughly.
  2. Shape into four individual meat loaves.
  3. In large skillet, heat olive oil over medium heat. Brown loaves on all sides.
  4. COVER; simmer 25 minutes; spoon out fat.
  5. Add remaining broth, water and mustard to skillet. Stir.
  6. Cook, UNCOVERED, 10 minutes. Stir sauce now and then.
  7. Brush tops of loaves with your favorite barbecue sauce (if desired).
