In honor of Cinco de Mayo, I am posting my delicious beef tacos! I have been making tacos this way ever since I was 17 years old when I learned how from a lady I babysat for. My family loves them and they now prepare theirs the same way! It is the chorizo that sets them apart from any other taco that I have ever had. I hope you try this recipe and feel the same as I and my family do!!!

These tacos bring Taco Tuesday to a whole new level. Chorizo mixed with the ground beef is what makes these so special. It gives the filling tons of flavor without adding additional seasoning. Frying the tortillas makes the tacos nice and warm. Dress them however you like, but we followed Jeanne's recommendation. They were perfect!

Ingredients For to die for beef tacos

  • FOR TACO MEAT
  • 1 lb
    ground beef, I buy 85/15% fat
  • 1/2
    link soft chorizo, 6 oz.
  • salt, to taste
  • pepper, to taste
  • TOPPINGS
  • 1 lg
    tomato, cut up
  • 1/2 md
    red onion, chopped
  • 1 lg
    avocado, chopped
  • 1 bag
    taco seasoned cheddar cheese
  • 1 bag
    shredded lettuce
  • 1
    container sour cream
  • salsa, mild or spicy; your choice. i like ketchup, lol!
  • TORTILLAS
  • 1 pkg
    super-size corn tortillas
  • canola oil for frying tortillas

How To Make to die for beef tacos

  • Browning ground beef.

    Fry ground beef and add salt and pepper to taste.
  • Adding chorizo to ground beef.

    Add 1/2 link of soft chorizo and mix into the ground beef. Taste and add additional seasoning if necessary.
  • Preparing the toppings.

    Prepare all toppings and make a nice presentation if you are serving to company.
  • Oil added to a pan.

    To prepare tortillas, add enough oil to the pan to cover tortilla and heat to medium-high.
  • Frying tortilla in a pan.

    With tongs, add tortilla to hot oil and count 8 seconds. Turn over and count another 8 seconds. Take end of tortilla and fold in half and count another 8 seconds. Turn over and count another 8 seconds. Take paper towel and drain oil from tortilla.
  • Adding ground beef to the fried tortilla.

    To cooked tortilla, fill first with the ground beef, about two tablespoons.
  • Topping the meat with cheese.

    Add cheese on top of meat.
  • Adding onions to taco.

    Add onions if you like.
  • Adding tomatoes to tacos.

    Add chopped tomatoes.
  • Adding avocado.

  • Stuffing with lettuce.

    Add shredded lettuce...sliced or chopped black olives are also a nice addition.
  • Topping with sour cream.

    Add sour cream and salsa or topping of your choice! Then just enjoy!

    FYI: I am adding pictures for those of you who are unfamiliar with chorizo. Please note that they also make pork chorizo but I use the beef kind.
