Nestor C. my Ukraine friend from the south side of Chicago taught me how to cook his wonderful 1947 family recipe. It is always a "must bring" at all pot luck gatherings. Great served with mashed potatoes on the side. Occasionally we would layer the bottom of the casserole with a jar of drained sauerkraut . Polish rye bread is a must with this meal.

  • 1 c
    rice,= 1 cup makes 2 1/2 cups cooked
  • 1 lb
    large head cabbage
  • 2 lb
    ground beef
  • 1
    large onion chopped
  • 1
    egg beaten
  • dash
    salt and pepper to taste
  • 2 can
    tomato soup, small cans
  • 1/4 lb
    bacon, uncooked

    Cook rice, set aside. Preheat oven 350 degrees. I n a large pot of boiling water,add whole head of cabbage, boil 10 minutes.Remove from pot. Cut out the core, and softened outside cabbage leaves.Set aside. Return cabbage head to boiling water and boil a few minutes more, until more leaves are softened.
  • Second shot of Stuffed Cabbage Rolls.

    In a large bowl, combine cooked rice,hamburger,onion, egg, salt and pepper. Mix well. In each cabbage leaf put 2-3 Tablespoons of meat mixture on the thick part of each leaf..Fold each side in and roll all leaves. Secure with a tooth pick. Place rolls in a casserole dish with a lid. Seam side down.If you have to you can stack rolls. Pour soup and water over cabbage bundles.Lay strips of bacon over the top of bundles.

    Cover and bake 30 minutes. Then reduce heat to 250 degrees for 1- 1/2 hours. Baste occasionally with the tomato soup in the casserole. 1/2 hour before done, remove lid to brown bacon.
