smoked summer sausage pasta salad

If you ever get a chance to smoke a log of summer sausage, it is off the hook good. I created this salad to use up leftover summer sausage, and it's really a meal in itself! You could use any cooked sausage or even bacon instead.

Ingredients For smoked summer sausage pasta salad

  • 4 c
    cooked pasta
  • 2 c
    smoked summer sausage, cubed
  • 1
    red bell pepper, roasted
  • 1
    poblano pepper, roasted
  • 1/2 c
    diced onion
  • 1 1/2 c
    grated cheddar, 2%
  • 1/2 tsp
    black pepper
  • 1 c
    sour cream, lite

How To Make smoked summer sausage pasta salad

    Cut red bell and pablano in half, remove stems and seeds. Place on baking sheet and broil for 5-7 min. till charring begins. Remove, cool, and dice. Dice onion, and grate cheese. Cube summer sausage, or any other sausage into small bite size pieces.

    Place all ingredients in a large bowl, add black pepper and sour cream. Mix to combine. Refrigerate until serving.
